Crispy Roasted New Potatoes
If you love potatoes, you will surely enjoy these crispy roasted new potatoes. You can experiment and season them with any spices and herbs you like. They are also excellent with rosemary and roasted garlic, and for an extra touch, you can place a piece or two of homemade bacon on each potato.

Ingredients

Thoroughly wash the potatoes under running water and scrub them if necessary. Do not remove the skins, but cut off any eyes, green spots, or damaged parts.

Place the cleaned potatoes in a pot and cover them with enough cold water to fully submerge them. Bring the pot to a boil. Add salt, reduce the heat, and cook the potatoes until they soften and can be pierced with a fork (about 15 to 20 minutes). Drain the cooked potatoes and let them cool slightly.

Preheat the oven to 220 degrees Celsius. Cut the garlic head in half. Line a low baking dish with parchment paper or lightly grease it with oil. Place the cooled potatoes on the dish and gently press each one with the bottom of a glass or a potato masher. Be careful to keep the cooked potatoes intact. Drizzle the potatoes with olive oil and season with salt, freshly ground pepper, and rosemary. Gently toss them and spread them out in the baking dish. Add the halved garlic head to the dish and drizzle it with a little olive oil as well.

Place the baking dish in the preheated oven and let the potatoes roast for about 15 minutes or until they are golden brown on the bottom. Use a spatula to flip the potatoes and drizzle them with a little more olive oil if needed. Season with salt and pepper. Let them roast in the oven for another 10-15 minutes.

Once the potatoes are golden brown on top, remove them from the oven and serve as a main dish or a side.
