Steps

Preheat the oven to 220 degrees Celsius.

Wash the potatoes well and boil them in their skins in salted water for about 25 minutes. Be careful not to overcook them. They are ready when they can be easily pierced with a fork.

Drain the potatoes well and arrange them on a larger baking tray lined with baking paper. Press each potato with a masher or glass to about a centimeter thick. The thinner the potatoes, the crispier they will be in the end. Drizzle them with olive oil, season with salt and pepper, and place them in the preheated oven for 15 minutes.

After 15 minutes of baking, flip the potatoes, drizzle them with oil, and season them. Bake for another 15 minutes until they turn golden brown. Sprinkle with chopped parsley and serve hot.
