Steps

Preheat the oven to 160 degrees Celsius. Lightly grease six round ramekins (180 ml capacity) with butter.

Pour milk and cream into a saucepan. Add the orange zest and slowly bring the mixture to a gentle boil over moderate heat.

Whisk the egg yolks and sugar until frothy. While continuously whisking, slowly pour the hot cream mixture in a thin stream. Then, mix in the orange liqueur.

Arrange the ramekins in a deep baking dish. Fill them almost to the top with the prepared mixture, straining it through a fine sieve if desired. Carefully place the baking dish on the oven rack, then pour hot water into the dish. The water should reach halfway up the ramekins. Bake in the preheated oven for about 40 minutes or until the custard is set. Test the readiness by inserting a thin knife into the custard - if it comes out clean, the custard is ready.

Carefully remove the ramekins from the oven. Allow the custard to cool to room temperature, then refrigerate for at least 4 hours (preferably overnight) to chill and set completely.

Just before serving, take the ramekins out of the refrigerator and sprinkle sugar over the top of the custard. Caramelize the sugar using a handheld kitchen torch or under the broiler in the oven. Garnish the dessert with a piece of orange if desired and serve immediately.
