Crêpes Suzette
Crêpes Suzette are small and very thin pancakes, topped with an orange sauce. They are considered a classic French dessert. The original recipe includes alcohol (maraschino, cognac, or Grand Marnier), and the pancakes are flambéed just before serving.

Ingredients
Dough

3 pieces Egg, fresh

2 pinch Salt, table

1 spoon Powdered sugar

300 ml Milk, skimmed

2 spoons Alcohol, Rum

125 g Wheat flour, white, multi-purpose

2 spoons Oil, plant, sunflower

10 cl Alcohol, Rum
Sauce

60 g Butter, unsalted

2 piece Orange, fresh

10 cube Sugar, white

Beat the eggs well with a hand whisk, then add milk, salt, sugar, and rum. Sift the flour into a larger bowl and pour the egg mixture over it. Mix well with a whisk to create a smooth batter without lumps, then let it rest for 15 minutes.

Place sugar cubes in a bowl, pour orange juice over them, and add grated orange zest.

Heat a little oil in a small pan, and once hot, cook small and very thin pancakes. Fold the cooked pancakes into quarters and keep them warm.

Melt butter in a clean pan. Add the sugar with orange zest and juice to the melted butter and stir until the sugar is completely dissolved.

Serve the pancakes on small plates and pour the orange sauce over them. Then pour Grand Marnier (maraschino, cognac) over the pancakes and flambé. Serve the dessert immediately.
