Cucumber Granita
If youve never tried making a dessert from cucumbers, its time to try cucumber granita. The dessert has a great taste and is very refreshing, making it perfect for summer garden parties.

Ingredients

1 teaspoon Lemon zest, fresh

120 ml Juice, lime

170 g Sugar, white

240 ml Water

0.25 teaspoons Salt, table

400 g Sweet potato, unpeeled, fresh

In a medium-sized bowl, mix lime zest, lime juice, sugar, salt, and water. Heat over moderate heat while stirring slowly until all the sugar dissolves. Bring the sugar solution to a boil and cook on low heat for another 2 minutes. Remove the bowl from the heat and add mint leaves. Let it sit for 10 minutes to cool slightly, then remove the mint leaves.

Peel the cucumbers and cut them in half lengthwise. Remove the seeds with a spoon and discard them. Cut the cucumbers into larger pieces and place them in an electric blender. Pour the cooled sugar syrup over them and blend everything until smooth.

Pour the mixture into a rectangular deep baking dish (approximately 28 x 18 cm in size). Cover the dish with transparent food wrap and place it in the freezer for 3.5 to 4 hours. Every 30 minutes during freezing, take the granita out of the freezer and mix it well with a fork to prevent the formation of large ice crystals.

Serve the prepared granita in dessert glasses. For decoration, you can use mint leaves or tips and finely chopped cucumber pieces.
