Cucumber Soup with Coriander and Crab Meat

400 g Sweet potato, unpeeled, fresh

2 piece Onion, young

5 dl Yogurt, plain, from whole milk

1 handful Coriander, leaves, fresh

1.5 spoons Juice, lemon

0.75 teaspoons Salt, table

2 pinch Spices, pepper, black

120 g Fish, crab, fresh

0.5 piece Chili peppers, red chili, fresh

1.5 spoons Juice, lime

2 spoons Oil, olive
Steps

Wash and peel the cucumbers. Cut them in half and use a spoon to scoop out the seeds, which you discard. Clean and wash the spring onions. Cut the cleaned cucumbers and spring onions into smaller pieces.

Add the cucumber, onion, 3/4 of the coriander leaves, yogurt, salt, pepper, and lemon juice to an electric mixer and blend everything until smooth. Pour into a bowl, cover with plastic wrap, and place in the refrigerator to chill the soup well.

Transfer the crab meat from the can to a bowl. Wash the chili, remove the seeds, and finely chop it. Add the chopped chili, lime juice, and olive oil to the bowl with the crab meat. Mix everything well and season with salt if needed. Cover the bowl and store it in the refrigerator.

Once the soup and crab meat are well chilled, take the bowls out of the refrigerator. Mix half of the crab meat into the soup and distribute it among soup plates or bowls. Garnish with the remaining crab meat and reserved coriander leaves.

Advice
The soup can also be garnished with cucumber slices. If you like the taste of coriander, you can add more. If you dont like coriander, you can substitute it with dill, mint, or parsley.
