Cucumbers in Sauce
Cucumbers in sauce, also known as murkin zos, cucumber zos, cucumbers in zos, and warm cucumbers, are one of the most popular summer dishes among Slovenians. Essentially, it is a very simple, rustic dish that our grandmothers used to prepare, and the recipe has been passed down from generation to generation.

Ingredients

2 spoons Oil, olive

1 piece Onion, raw

3 pieces Sweet potato, unpeeled, fresh

2 piece Tomato, red

2 pod Garlic, fresh

1 spoon Tomato, concentrate

1 teaspoon Spices, paprika

pieces Salt, table

pieces Sweet cream

pieces Parsley, fresh
Steps

Peel the cucumbers and cut them in half lengthwise, then grate them or slice them thinly. If the cucumbers have larger seeds, remove them with a spoon. Taste the cucumbers while cutting or grating to ensure they are not bitter.

Peel the onion and garlic, and chop them separately. Wash the tomato and cut it into smaller pieces.

Place a larger pan on the stove and heat the oil. Lightly sauté the chopped onion in the oil. Add the tomato and cook it over moderate heat for about ten minutes until it dissolves.

Add tomato paste, garlic, and ground paprika to the pan. Sauté everything together for another 2-3 minutes, then add the cucumbers. Mix well and add a little water if needed. Season with salt and ground pepper to taste and let the cucumbers cook in the sauce until they soften.

At the end, optionally stir in cooking cream or sour cream into the sauce. Let the sauce cook for a few more minutes, then remove it from the heat. Adjust seasoning with salt and/or pepper if necessary.

Serve the cucumbers in sauce with mashed potatoes. Optionally, sprinkle some freshly chopped parsley on top of the sauce.
