Cut the pork into eight steaks. Pound the steaks and coat them with two tablespoons of oil. Heat a pan, pour in two tablespoons of oil, and place the steaks in the pan. Cook until the steaks are nicely browned on both sides, then season with salt and pepper.

Peel and finely chop the onion. Place the grilled steaks in a warmed bowl and garnish with the chopped onion. Serve with rustic bread and a pepper salad.

Advice
The steaks are even tastier if prepared on a grill with charcoal underneath. Start grilling only when the fire has died down and embers have formed in the grill. Regulate the heat by covering the embers with ash, preventing the meat from smoking. While grilling, baste the meat with fat or oil until a crispy crust forms, while the inside remains pink and juicy. If grilling, you can pierce the onions with a long needle and skewer them on rosemary branches, then grill them whole and in their skins. They will pair excellently with the grilled meat.
