Czech Dumplings
Dumplings, made from fermented dough and boiled in salted water, are very light and absorbent, making them an excellent side dish for goulash or steaks in sauce.

Ingredients

150 ml Water

1 bag Yeast, dry

1 teaspoon Sugar, white

340 g Wheat flour, white, multi-purpose

160 g Semolina

1 teaspoon Salt, table

1 piece Egg, fresh
Steps

In 150 ml of lukewarm water, smoothly mix the yeast and sugar. Let the yeast mixture stand in a warm place for 10 minutes to rise.

In a bowl, add the flour and mix it with salt and breadcrumbs. Make a well in the center, pour in the yeast mixture and the beaten egg. Mix well with a spoon and add enough lukewarm water so that the ingredients come together and form a rough dough. Turn the dough onto a clean work surface and knead into a smooth, pliable, and firm dough that does not stick to your hands or the work surface. Shape the kneaded dough into a ball, place it in a bowl, cover with a clean cloth, and let it rest in a warm place for 60 minutes.

Quickly knead the risen dough. If it is very sticky, dust it with a little flour. Divide it into three parts and shape them into slightly thicker elongated rolls, which you let rise in a warm place for 10 to 20 minutes.

Place a large pot with a generous amount of salted water on the stove. Place the risen rolls into the boiling water, cover the pot, and cook the dumplings for 20 to 25 minutes. After 10 to 15 minutes of cooking, turn them over and make sure the water in the pot is gently simmering throughout the cooking time.

Remove the cooked dumplings from the pot using a slotted spoon. Cut them into slices using a thread or string, serve them on plates, and offer them as a side dish for goulash, stews, or steaks in sauce.
