Dandelion Jelly
Towards the end of spring, meadows turn yellow as dandelions bloom. These flowers are not only beautiful but also useful in the kitchen. From them, you can prepare an excellent jelly that rivals honey in taste.

Ingredients

4 cup Elderberry, flower, fresh

4 cup Water

pieces Juice, lemon

1 bag Gelatin powder, unsweetened

4.5 cups Sugar, white

First, carefully clean the picked flowers and remove any insects (if necessary, rinse the flowers under running water and dry them well). Then, pluck the yellow petals from the flower heads (you can also do this by cutting off the green part with scissors).

Place the petals in a large pot. Add water and place the pot on the stove. Slowly bring the contents to a boil over moderate heat. Then reduce the heat and simmer gently for another 10 minutes. Remove the pot from the heat and let the contents cool.

Strain the cooled liquid through a very fine sieve or cloth. You should get about 3 cups of strained liquid, which you pour back into the pot. Mix in the lemon juice and pectin. Place the pot back on the stove and cook, stirring constantly, until the mixture comes to a boil. Then add the sugar and continue cooking, stirring, until the sugar is completely dissolved and the mixture boils again. Let it boil for another minute, then perform a gel test. Drop a few drops of the hot jelly onto a cold plate. If it sets, the jelly is ready; otherwise, cook for a few more minutes.

Skim off any foam that formed during cooking from the hot jelly. Pour the hot jelly into jars. Fill the jars to just below the rim. Seal the jars tightly, cover them with a blanket, and let them cool slowly.
