Thoroughly clean the dandelion, wash it, and dry it. Place it in a large salad bowl. Cut the pancetta into thin pieces. Peel and finely chop the shallot. Prepare the vinaigrette dressing in a small bowl. First, mix the vinegar, mustard, and salt. Whisk with a hand whisk until the salt is completely dissolved. Season with white pepper, then slowly drizzle in the oil while continuously whisking to ensure the ingredients blend well. Finally, mix in the chopped shallot.

Heat oil in a pan and fry the pancetta pieces until crispy. Transfer the fried pancetta along with the fat to the bowl with the dandelion. Gently toss, pour the prepared dressing over it, mix once more, and serve.

Advice
