Ingredients

150 g Flour, Whole wheat

1 teaspoon Baking powder

1 teaspoon Spices, cinnamon, ground

2 spoons Margarine

75 g Sugar, turbinado

1 piece Apple, fresh

250 ml Juice, apple

2 spoons Marmalade, orange

1 piece Egg, fresh

75 g Date, fresh or dried

1 handful Walnuts

Preheat the oven to 200°C. Line a 12-cup muffin tin with paper liners (or shape baking paper into cups).

Roughly chop the walnuts with a knife. Sift both flours, cinnamon, and baking powder into a large bowl. Add the margarine and rub it into the mixture with your fingers to create a crumbly texture, then mix in the sugar.

Remove the pits from the dates and chop them into pieces. Wash the apple, cut it into quarters, remove the core, and chop it into small pieces. Crack the egg into a bowl, add the apple juice and marmalade, and whisk well. Pour the egg mixture into the bowl with the flour and quickly mix with a whisk to moisten all the ingredients. Finally, fold in the dates and apples.

Fill the muffin cups three-quarters full with the prepared batter. Sprinkle the muffins with the chopped walnuts and bake in the preheated oven for 20 to 25 minutes until golden brown. Cool them on a wire rack, arrange on a serving plate, and serve.
