Place a larger pan on the stove and add sesame seeds, lightly toasting them over moderate heat. Shake the pan occasionally to ensure even toasting. Transfer the toasted sesame seeds to a shallow plate.

Carefully open the dates with a sharp knife, making sure both halves remain connected. Remove the pit and replace it with a peeled almond. Close the dates and roll them in the sesame seeds. Arrange them on a serving plate and serve.
