Delicate Raspberry Cake

This beautiful delicate cake with fruit is a great solution for those who are allergic to eggs, as it does not contain them and will surely please everyone. If you serve it with whipped cream and a scoop of ice cream, all your guests will remember it for a long time.

500 g Wheat flour, white, multi-purpose

2 dl Yogurt, plain, from whole milk

1 bag Baking powder

Steps

Sift the flour together with baking powder. Add sugar, vanilla sugar, salt, and yogurt. Mix a little and add cold, diced butter. Knead into a smooth dough, wrap it in foil, and let it rest for about 20 minutes in a cool place.

Meanwhile, prepare the filling. Place frozen raspberries in a pot and add regular and vanilla sugar. Cook over low heat until the fruit dissolves. Do not puree the raspberries, just let them cool.

Roll out the rested dough to about 3 millimeters thick. Cut it into a rectangle and use a pizza cutter to make long strips, about the width of your palm. Place the cooked raspberries lengthwise in the center of each strip (as shown in the picture), then press the opposite edges together.

Carefully roll the filled strip into a snail shape, then place it in the center of the baking dish.

Fill the remaining strips with the cooked raspberries and wrap them around the central snail in the baking dish. If you have any filling left, drizzle it over the roll, and before baking, decorate it with fresh strawberries and blueberries. If you don't have them, you can use just one type of berry. Bake the prepared roll for about 45 minutes at 180 degrees Celsius.

Sprinkle the baked dessert with powdered sugar and serve with sweet cream and a scoop of ice cream or as you prefer.
