Delicate Walnut Fingers

Ingredients

200 g Wheat flour, white, multi-purpose

0.5 spoons Powdered sugar

150 g Butter, unsalted

4 pieces Egg, fresh

1 pinch Salt, table

150 g Sugar, white

2 bags Sugar, white

1 spoon Juice, lemon

180 g Walnuts

In a bowl, sift the flour and mix it with powdered sugar. Add the diced butter to the mixture. Use your fingertips to work the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolks and quickly knead the ingredients with cold hands into a dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for half an hour.

Roll out the chilled dough on a lightly floured surface to about 0.5 cm thickness. Using a rolling pin, transfer it to a baking tray lined with parchment paper.

Beat the egg whites with a pinch of salt until foamy. Once they turn white, gradually add the sugar. Continue beating until you get a firm and glossy meringue. Gently fold in the lemon juice and ground walnuts using a spatula or spoon. Spread the walnut filling evenly over the rolled-out dough. Bake the pastry for about 25 minutes in an oven preheated to 150°C.

While still warm, cut the pastry into thin fingers. Let it cool completely, then serve on a plate or platter.
