Dessert with Pudding and Cookies

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (25 x 30 cm) with butter and dust it with flour. In a bowl, mix the flour and baking powder. In another bowl, use an electric mixer to beat the eggs and sugar until frothy. Sift the flour and baking powder mixture into the egg mixture and slowly mix on low speed. Once you have a smooth batter without lumps, stop mixing.

Pour the batter into the prepared baking dish and spread it evenly with a spatula, smoothing the top. Bake in the preheated oven for 15 to 20 minutes, or until it turns a nice golden brown. Let the baked biscuit cool.

In a small bowl, mix the pudding powder, sugar, and a few tablespoons of milk into a smooth paste. Pour the remaining milk into a pot and bring it to a boil. Remove the pot from the heat and stir in the pudding mixture. Return the pot to the stove and cook, stirring constantly, until the pudding thickens.

Spread the hot pudding evenly over the cooled biscuit. Wait until it cools to lukewarm, then arrange the butter cookies on top, which have been dipped in a mixture of milk and rum on the bottom side.

Melt the chocolate together with oil and milk in a double boiler. Once the mixture has cooled slightly, pour it over the butter cookies. Refrigerate the dessert for a few hours before serving to allow it to cool and set.
