Detox Green Soup
Every now and then, its necessary to "cleanse" the body of unnecessary buildup. Usually, we help ourselves with detox juices and drinks. If you have trouble drinking green vegetable drinks, soup will definitely be an excellent choice. We can prepare it from various green leaves such as spinach, garlic, dandelion, arugula, chard, lettuce, and watercress.

Ingredients

600 ml Soup base, chicken, cube

1 piece Onion, raw

3 pieces Onion, young

500 g Arugula

0.5 bouquet Peppermint, fresh

2 teaspoons Koruzni škrob

200 ml Milk, skimmed

0.75 teaspoons Salt, table

Peel and finely chop the onion. Clean and wash the spring onion. Finely chop the white part and slice the green part into rings. Clean, wash, and thoroughly drain the remaining vegetables.

Pour the soup base into a larger pot and add the regular and spring onion. Cover the pot and cook the contents over moderate heat for about 10 minutes until the onion softens.

Then add the green vegetables to the pot. Partially cover the pot and cook the vegetables at a gentle simmer for about 10 minutes. Meanwhile, tear the mint leaves from the stems and finely chop them. When the vegetables in the pot soften, add the chopped mint leaves and cook everything together for another 2 minutes.

Remove the pot from the heat and blend the vegetables smoothly with an immersion blender. In a small bowl, mix the cornstarch with a few tablespoons of milk. Stir the mixture into the remaining milk. Pour the milk into the pot and mix well with a whisk. Bring the soup to a boil, then reduce the heat and cook until the soup thickens. Season to taste with pepper and salt.

Serve the prepared soup in soup bowls and accompany with rye or whole-grain bread.
