Tuna Burger: Cut the tuna fillets into smaller squares to create bite-sized pieces. Sear them on both sides in olive oil enriched with a sprig of rosemary. After cooking, cut the seared tuna pieces in half if they are too thick. Season with salt to taste.

Wash the shrimp tails, dry them well, and cut them into small pieces. Mix the pieces with egg, cornmeal, pepper, and salt. Form the mixture into small patties (about the size of the tuna fillets) and fry them until golden brown on both sides in olive oil.

Clean and wash the arugula. Place a piece of tuna fillet on the plate and top it with a little arugula. Add some mustard and homemade tomato sauce. Place a thin slice of tomato on top and lightly salt it. Add the shrimp patty and sprinkle with rings of young onion. Cover everything with another piece of tuna fillet.

Brussels Sprouts: Steam the Brussels sprouts for 10 minutes. In a pan, melt butter and fry the pancetta pieces until crispy. Add the water chestnuts and chili to the pan, fry for half a minute, and finally add the Brussels sprouts. Fry while stirring for another 30 seconds, then remove the pan from the heat.
