Ingredients
Dough
-
1 kg Wheat flour, white, multi-purpose
-
1 teaspoon Salt, table
-
pieces Lemon zest, fresh
-
4 spoon Sugar, white
-
2 piece Yeast, dry
-
5 dl Milk, whole milk
-
8 pieces Egg, egg yolk, fresh
-
0.05 dl Alcohol, Rum
-
2 dl Oil, vegetable oil, canola
-
pieces Orange, fresh
-
1 bag Sugar, white
-
pieces Oil, vegetable oil, canola
Steps
-
Sift the flour into a bowl and make a well on each side. Add salt to one well, crumbled yeast and one tablespoon of sugar to the other. Grate some lemon zest in the middle. Pour part of the lukewarm milk into the well with the yeast and slowly mix it into the flour with a spoon. Let it rest for a few minutes to allow the yeast to rise slightly.
-
Mix the egg yolks with the remaining sugar, lukewarm milk, rum, oil, orange juice, and vanilla sugar until smooth. Pour this mixture into the well with the yeast. Knead the ingredients with clean hands or a mixer (using spiral hooks) into a smooth dough that comes off your hands easily and forms bubbles.
-
Shape the kneaded dough into 80 g balls and place them on a damp cloth. Leave some space between them as they will expand while rising. Cover the balls and let them rise in a warm place until they double in size.
-
Fry the risen donuts until golden brown in oil heated to 160 to 165 degrees Celsius. Place them in the hot oil with the risen side down first, cover the pot, and after three to four minutes, uncover it, flip the donuts, and fry them until golden brown on the other side.
-
Drain the fried donuts well on paper towels. Fill, glaze, and decorate them as desired. Serve the prepared donuts on a plate or platter and enjoy.
