300 g Flour, Wheat, bread flour

1 pinch Salt, table

Sift the flour into a bowl, add salt, and pour in water. Knead with your hands until you have a smooth and elastic dough. Shape it into a ball and store it in a bowl, covered. Let the dough rest for 1 hour.

To prepare the dough bases for Chinese dumplings, knead the dough once more on a lightly floured work surface and shape it into a 4 cm thick roll. Cut the roll into narrower rings with a knife. Roll out each ring to 1.5 mm thick to create small round dough bases.

The dough bases can be stored in a bag in the refrigerator or freezer, or used immediately: fill them with stuffing, shape them, and either boil or deep-fry them.
