Dražgoše Honey Cookies
Dražgoše cookies are among Slovenian ornamental masterpieces. They are certainly something special, especially because of the handmade decorations that have spread mainly in Dražgoše and the surrounding areas in the Loško region. Once, they were particularly popular on the feast of the Three Kings, when boys and girls would exchange them as gifts. It is a holiday for single girls, and the three kings symbolize mediators in the formation of marital unions.

Ingredients

1 kg Honey

1.5 kg Rye flour

Steps

Place a pan on the stove and heat the honey. In a large bowl, mix rye flour, ground cinnamon, and ground cloves. Dissolve the salt in water and add it along with the heated honey to the ingredients in the bowl. Knead into a smooth and thick dough.

Repeat the process for preparing the wheat dough for the ornaments. Be careful to reduce the amount of ingredients.

Roll out the rye dough well on a damp wooden surface, then cut out the desired shape. Decorate the edges with a pinch tool, or you can also use a fork. Brush the honey cookies with water and decorate with any icons made from the wheat dough (threads, wheat ears, flowers, etc.).

Preheat the oven to 165 °C, and grease or line a baking tray. Place the honey cookies on the tray and bake them for 10–15 minutes depending on their size. In a small cup, dissolve one tablespoon of honey in 100 ml of water, heat to boiling, and then remove from heat. Brush the baked cookies with the hot honey water, which gives them a beautiful shine.

Advice
Jelenova salt is used as a leavening agent for heavy pastries and cookies. It can be replaced with baking powder, but baking soda works much better.
