Steps

Preheat the oven to 220 degrees Celsius. Wash the duck breasts and dry them with a clean cloth or paper towel. Rub the breasts with salt, red paprika, and a bit of black pepper. Pour oil into a baking dish and place the seasoned meat in it. Roast the breasts for 30 minutes, turning them once during cooking and basting them several times with hot oil and the juices that form during roasting.

Wash the arugula, drain it, and spread it on plates. Peel the orange and slice it thinly. Remove the roasted breasts from the oven. On a cutting board, slice them thinly. Arrange the slices in a circle over the arugula, then decorate the plate with orange slices. Serve immediately.
