Duck Breast with Raspberry Sauce

Peel the garlic and slice it very thinly. Thoroughly wash the meat and make two or three shallow cuts in each piece of duck breast, into which we insert a slice of garlic. Rub the meat with ground paprika. Thoroughly wash the lime, grate the zest, and squeeze the juice. Thoroughly wash the cilantro, dry it, and chop it very finely. Also, thoroughly wash the raspberries that we will use for the raspberry sauce.

Mix fresh raspberries, cilantro, lime zest, and juice well with a hand blender. Place a pan on the stove and heat the oil. Place the duck breasts in the pan and cook them for about 5 minutes on each side until they are well seared. Then season them with salt and pepper to taste.

Place a new saucepan on the stove and heat the raspberry sauce, which we pour over the duck breasts. Serve on a plate and garnish with fresh raspberries and cilantro leaves as desired.

Advice
