Ingredients
-
2 piece Meat, Duck, meat only, fresh
-
2 handfuls Pasta, thin rice noodles
-
1 piece Onion, raw
-
5 spoon Oil, olive
-
2 dl Water
-
2 spoons Tomato, concentrate
-
2 pinch Salt, table
-
1 piece Spices, bay (leaves)
-
0.25 teaspoons Spices, pepper, black
-
2 spoons Thyme, raw
Steps
-
Peel and roughly chop the onion. Wash the duck legs and dry them with a paper towel. In a larger pan, add olive oil, heat it, and first add the onion, then the duck legs. Sear the duck legs well on both sides (until they get a golden brown color) and at the same time make sure the onion does not burn. Pour water over the duck legs, stir with a cooking spoon, add tomato paste, salt, bay leaf, stir, and cook uncovered over moderate heat for 15 minutes.
-
Cook the pasta in salted water according to the instructions on the package. Drain the cooked pasta and keep it warm.
-
Gently stir the sauce and duck legs, season, add a little more water if needed, then cook for another 15 minutes. Wash the parsley, shake it off, and finely chop it. Place the pasta on plates, lay the duck legs on top, and pour the sauce over everything. Finally, sprinkle fresh parsley over the duck legs and serve.
