Rinse the duck meat and pat it dry with a paper towel. Rub it with salt and pepper. Preheat the oven to 180°C and grease a baking dish. Arrange the duck pieces in the dish, drizzle with a little oil, and bake for 50 minutes. Turn the meat several times during baking to ensure even cooking.

Cut the oranges in half and juice them, then pour the juice into a pan. Bring the juice to a boil and add sugar, a pinch of salt, and water. Stir and cook over moderate heat until the sugar dissolves. Thoroughly wash the third orange and grate about one teaspoon of zest, which you add to the sauce. Slice the remaining orange into thin rounds and place them in the pan. Cook over moderate heat for another 10 minutes.

Remove the baked duck pieces from the oven and place them in the orange sauce. Cook everything together for another 5 minutes, then serve the duck legs on plates and pour the sauce over them.
