Duck Legs with Apples and Dried Plums
Fatty duck meat is excellent in combination with roasted fruit. We decided to use dried plums and apples, but you can also add pears and quinces if desired.

Ingredients

2 spoons Oil, vegetable oil, canola

4 pieces Game meat, Duck, breasts, fresh

3 pieces Apple, fresh

200 g Dried plums

5 pods Garlic, fresh

3 pieces Spices, bay (leaves)

1 handful Thyme, fresh

1 teaspoon Salt, table

0.25 teaspoons Spices, pepper, black

Preheat the oven to 200 degrees Celsius. Clean the duck legs, rinse under running water, and dry thoroughly with paper towels. Season them well with pepper and salt. Wash the apples and cut them into quarters. Remove the stems and cores.

Grease a deep baking dish with oil. Place the apple quarters, dried plums, garlic (unpeeled cloves), bay leaves, and thyme sprigs into the dish. Lightly season the ingredients in the dish with pepper and salt, drizzle with a little oil, mix well, and spread evenly across the bottom of the dish. Place the seasoned duck legs on top of the ingredients. Put the dish in the preheated oven for 20 minutes.

After 20 minutes, remove the dish from the oven. Baste the legs with the juices that have collected in the dish, turn them over, and bake in the preheated oven for another 20 minutes. Then remove the dish from the oven again, turn the legs once more, baste with the juices, and bake for an additional 10 to 15 minutes.

Serve the roasted duck legs on plates, garnish with the roasted fruit, and pair with your chosen side dish.
