Easter Bread
In the past, white bread on peoples tables was only found on special occasions; most often for holidays. It was often enriched with the addition of eggs, butter, and sugar, and lavishly decorated, which brought them luxury and gave the holiday a festive touch.

175 ml Milk, whole milk

560 g Wheat flour, white, multi-purpose

Prepare the yeast: Pour warm milk into a medium-sized bowl, add yeast, a tablespoon of flour, and a teaspoon of sugar, mix well, and let the yeast rise (about 15 minutes).

In a large bowl, sift the flour and mix it with salt and the remaining sugar. Place a pot with butter on the stove and heat it slowly over low heat to melt the butter. As soon as the butter melts, remove the pot from the heat. Add eggs and orange zest to the melted butter and mix everything well with a hand whisk. Pour the egg-butter mixture into the bowl with the yeast and mix everything well.

Pour the liquid mixture into the bowl with the dry ingredients. Use a mixer to mix all the ingredients well until they form a rough dough. Then turn the dough out onto a floured work surface and knead until it becomes smooth and elastic. Properly kneaded dough will not stick to your hands or the work surface. Shape the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a clean cloth and place it in a warm place until the dough doubles in size (about an hour and a half).

Quickly knead the risen dough and shape it into a loaf. Line a low baking pan with parchment paper. Place the bread loaf on the prepared pan and let the dough rise again (about an hour).

Preheat the oven to 175 degrees Celsius, set the rack in the oven to the middle height. In a small bowl, mix the egg yolk and one tablespoon of milk. Brush the risen dough with the mixture, sprinkle almond flakes on top, then place the pan with the loaf in the preheated oven for about 40 minutes.

Remove the baked loaf from the oven, transfer it from the pan to a rack, and let it cool completely.

Advice
It is best to use organic oranges, the peel of which is not treated with pesticides. If organic oranges are not available, immerse the orange in boiling water for a few minutes, then wipe it well to remove the wax, which contains toxins.
