Easter Bread Pudding
If you want to turn leftover Easter treats into a delicious meal, bread pudding is an excellent choice. Its also a great idea for a quick lunch or dinner, paired with a bowl of salad.

50 g Butter, unsalted

400 g Meat, pork, smoked ham

Steps

Cut the meat and bread into pieces. Wash the nettles (you can also use chives or spinach), dry them, and finely chop. Slowly melt the butter over low heat.

Mix the bread pieces with the melted butter, egg yolks, and chopped nettles. Add the chopped meat and season the mixture to taste with pepper, salt, and nutmeg. To prevent the mixture from being too dry, add a bit of the liquid in which the meat was cooked or use milk. Beat the egg whites into stiff peaks and gently fold them into the bread mixture.

Transfer the mixture into a greased baking dish and bake in a preheated oven at 180 degrees Celsius for about 30 minutes. The pudding is done when it rises and turns golden brown on top.
