85 g Sugar, white
-
275 ml Milk, whole milk

0.25 teaspoons Spices, mace, ground
-
0.5 teaspoons Salt, table
-
1.5 teaspoons Yeast, dry
-
1 teaspoon Lemon zest, fresh
-
125 g Raisins
-
1 piece Egg, fresh
-
2 spoons Milk, whole milk
-
4 teaspoon Wheat flour, white, multi-purpose
-
4 spoon Water
Steps
-
In a small pot over low heat, slowly melt the butter. Once the butter has melted, remove the pot from the heat and mix in the egg, sugar, and warm milk.
-
In a large bowl, sift the flour and mix it with salt and spices. Make a well in the center and add the yeast and lemon zest. Pour the liquid mixture into the well. First, quickly mix all the ingredients together to combine, then start kneading. Knead the dough on a lightly floured surface until it becomes soft and pliable. Then quickly knead the raisins into the dough.
-
Shape the dough into a loaf and place it in a lightly greased bowl. Cover the bowl with a clean cloth and let it rise in a warm place for one hour.
-
Punch down the risen dough on a lightly floured surface, shape it into a loaf again, place it back in the bowl, and let it rise in a warm place for another 30 minutes.
-
Punch down the dough again and divide it into 12 equal pieces. Shape each piece into a round loaf and place it on a baking sheet greased with butter. Cover the baking sheet with a cloth and let the loaves rise for another 20 minutes.
-
Preheat the oven to 200 degrees Celsius. In a small bowl, whisk the egg with the milk. Brush the risen loaves with the whisked egg. In another bowl, mix the flour and water into a smooth paste. Fill a decorating bag with the paste and make a white cross on each loaf. Place the baking sheet in the preheated oven for 30 minutes.
-
Transfer the baked loaves to a wire rack, let them cool slightly, and serve while still warm.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
