Ingredients
-
50 g Butter, unsalted
-
1 piece Onion, raw
-
4 pods Garlic, fresh
-
400 g Meat, chicken, liver
-
400 g Meat, pork, smoked bacon
-
3 pieces Spices, bay (leaves)
-
5 pieces Spices, pepper, black
-
1 teaspoon Thyme, fresh
-
40 ml Alcohol, Whisky
-
300 ml Sweet cream
-
pieces Salt, table
-
100 g Walnuts
-
100 g Meat, pork, smoked bacon
Steps
-
Peel the onion and garlic, then chop them separately. Remove any membranes from the chicken livers and cut them into smaller pieces. Cut the bacon into chunks.
-
Melt the butter in a pan and sauté the onion and garlic for one minute while stirring. Add the bacon, livers, bay leaf, allspice berries, and thyme. Continue to fry while stirring until the liver pieces are nicely browned on all sides. Pour the brandy over the ingredients and flambé.
-
Add the hot mixture to a food processor. Remove the bay leaf and allspice berries, and while blending, slowly pour in about half of the sweet cream. Once you have a completely smooth mixture, transfer it to a glass container, wait 10 minutes, add a bit more sweet cream, and mix. Repeat the process until all the cream is used. Season the pâté with pepper and salt to taste, and finally, mix in the coarsely chopped walnuts.
-
Line the bottom of an oblong baking dish with slices of bacon, then spread the pâté evenly over the entire surface and smooth the top. Store the pâté in the refrigerator for a few hours (preferably overnight) to cool and set.
-
When ready to serve, carefully turn the pâté out of the baking dish onto a platter, slice it, and serve with bread.
