Easter Pinca
Old cookbooks of our mothers and grandmothers are something I love to explore. I am always amazed by the tried and simple recipes that always work and are passed down from generation to generation. Easter holidays are just around the corner, and I am sharing with you a recipe for pinca, a sweet Easter bread that is served with ham and horseradish for breakfast.

Ingredients

500 g Wheat flour, white, multi-purpose

3 pieces Egg, egg yolk, fresh

100 g Sugar, white

1.5 dl Milk, whole milk

100 g Butter, unsalted

2 spoons Oil, plant, sunflower

0.5 teaspoons Salt, table

1 bag Yeast, dry

1 bag Vanilla, extract, imitation

pieces Lemon zest, fresh

pieces Orange, shell

1 spoon Butter, unsalted

1 spoon Powdered sugar
Steps

In the bowl of a kitchen robot, add flour, regular and vanilla sugar, salt, milk, grated lemon and orange zest, oil, softened butter, and egg yolks. Knead the ingredients into a smooth, slightly sticky dough. Mix in the robot for about 10 minutes to release the gluten and achieve a silky shine. If needed, add a little more milk or flour.

Cover the kneaded dough with a clean cloth and let it rise in a warm place for about one hour or until its volume doubles.

Divide the risen dough into three or four pieces, knead them slightly to form nice, round loaves.

You can also shape the dough into longer rolls or strands, braid three together into a round wreath, and place a fresh egg in the center.

Place the shaped pinca on a baking tray lined with parchment paper and cover them. Once the dough has doubled in size, make a cross-shaped incision on top of the pinca with a razor or knife. Do not cut the braids with the egg in the center.

Brush the pinca with melted butter, sprinkle with coarse sugar, and bake at 180 degrees Celsius for 25 to 30 minutes.
