Ingredients
-
2 spoons Oil, vegetable oil, canola
-
8 pieces Egg, fresh
-
180 ml Milk, whole milk
-
60 ml Sour cream
-
4 pieces Frankfurter
-
0.5 piece Onion, raw
-
120 g Cheese, edamame
-
0.25 teaspoons Salt, table
-
2 pinch Spices, pepper, black
-
1 handful Tomato, red
Steps
-
Peel and finely chop the onion. Rinse the frankfurters under running water and dry them well with paper towels. Cut them into smaller pieces and quickly sauté them in a pan with the chopped onion in a little oil or butter. Rinse the cherry tomatoes and cut them in half.
-
Preheat the oven to 175 degrees Celsius. Lightly grease a medium-sized baking dish with oil.
-
In a large bowl, first whisk the eggs well with a hand whisk, then mix them with milk and cream. Stir in the grated cheese, sautéed frankfurters and onion, salt, and pepper. Pour the mixture into the greased baking dish and arrange the halved cherry tomatoes on top (cut side up). Lightly season the tomatoes with salt, then place the dish in the preheated oven for about 45 minutes.
-
The bake is done when the top is nicely golden brown and the egg mixture in the center is no longer runny but firm to the touch. Cut the baked egg bake into pieces of any size, serve on plates, and accompany with slices of bread and/or a large bowl of salad.

You can add chopped bell peppers and/or fresh herbs (parsley, chives, basil, oregano, etc.) to the egg mixture if desired. The addition of onion can also be omitted.
