Egg Dumplings
A popular Austrian dish that is a great idea for a quick, tasty, and filling meatless lunch. You only need 4 ingredients and 20 minutes to prepare it, and it pairs well with a bowl of green salad.

Ingredients

50 g Butter, unsalted

3 pieces Egg, fresh

2 pinch Salt, table

240 ml Milk, whole milk

0.5 teaspoons Salt, table

320 g Wheat flour, white, multi-purpose

In a bowl, mix the milk, eggs, and salt. Stir the ingredients with a hand whisk or fork.

Add half of the flour to the bowl and mix well to form a smooth batter without lumps. Then mix in the remaining half of the flour. The batter should be thick but still slightly runny. If the batter is too thick, add a little more milk; if it's too thin, add a bit more flour.

Place a pot on the stove and bring a large amount of salted water to a boil. Dip a spoon into the boiling water for a few seconds, then use it to scoop a portion of the batter and add it to the pot. The dumpling will separate from the spoon upon contact with the hot liquid. Repeat the process until all the batter is used. If you have a smaller pot, cook the dumplings in two batches.

Stir the dumplings in the pot with a ladle to prevent them from sticking to the bottom. Once they float to the surface, cook them for an additional 1-2 minutes at a gentle simmer. Drain the cooked dumplings.

Place a large frying pan on the stove and melt the butter. Add the drained dumplings and sauté them for 1-2 minutes while stirring.

Crack three eggs into a small bowl and season them with salt and pepper. Beat them well, then pour the egg mixture over the dumplings in the pan. Reduce the heat to low and cook the dumplings while stirring until the eggs are set.

Serve the dumplings on plates. Sprinkle some chopped chives on top and serve the dish with a bowl of salad.
