Steps

Mix 1 tablespoon of cornstarch in a bowl with 4 tablespoons of water. Prepare the sauce: in a pot, bring the broth to a boil, add the spices and the dissolved cornstarch. Stir and let the sauce heat and thicken over very low heat. Stir occasionally while cooking.

Rinse the shrimp under warm running water, drain well, pat dry, and chop. Rinse and drain the bean sprouts. Peel and chop the onion. Wash the bell pepper, cut it in half, and remove the stem and seeds. Cut it into bite-sized pieces. Clean the mushrooms, rinse quickly, and dry. Slice them thinly. Clean, wash, and chop the green onion.

Heat 2 tablespoons of oil in a pan (or wok). When the oil is hot, add the shrimp. Quickly stir-fry until they turn pink and the flesh firms up.

In a large bowl, beat the eggs with salt and pepper using a whisk. Mix in the rice vinegar, stir-fried shrimp, and vegetables. Reserve some chopped green onion for garnish.

Heat oil for frying in the wok. The layer of oil should be 6.5 cm deep. When the oil is very hot (but not smoking), gently pour 1/4 of the egg mixture into the oil. Fry the omelette until golden brown on one side, then use a ladle to pour hot oil over the top of the omelette to set it. Gently flip the omelette with two spatulas and fry until golden brown on the other side. Transfer the omelette to a plate lined with paper towels to absorb excess oil. Repeat the process 3 more times.

Arrange the omelettes on plates, fold them in half, pour the sauce over them, and sprinkle with chopped green onion. Serve.
