Eggplant Rolls
They are a feast for the eyes and have an excellent taste. These prepared rolls are suitable for parties, as an appetizer or a side dish for a regular meal.

350 g Meat, beef, ground

2 piece Eggplant, raw

2 piece Onion, raw

2 pod Garlic, fresh

1 teaspoon Salt, table

Steps

Wash the eggplants thoroughly, clean them, and slice them into 1 cm thick rounds. Lightly salt each slice on both sides and place them in a colander set over a sink. Let the eggplant slices sit for at least 30 minutes. After 30 minutes, the eggplants will release some liquid. Wipe off any excess moisture from the slices with paper towels.

Add a few drops of oil to a grill pan and heat it well. Place the eggplant slices on the pan and cook them over moderate heat for 4 minutes on each side. Transfer the slices to a plate. Cut four slices into smaller cubes and set them aside for later. Cover the remaining slices with aluminum foil.

Peel the onions and garlic, wash them, and finely chop them. Place a fresh pan on the stove and heat it well. Pour the remaining oil into the pan and wait a few seconds for it to heat up. Add the onions and quickly sauté them until fragrant. Add the garlic, mix everything together, and sauté for another minute. Add the ground meat and cook it for a good 5 to 10 minutes, stirring constantly. After 5 minutes, season the meat with salt and pepper. At the very end, mix in the diced eggplant and stir everything well.

Remove the pan with the meat from the heat. Uncover the eggplant slices and fill each slice with a spoonful or two of the cooked meat, then roll them up. Secure the rolls with toothpicks to keep them closed. Arrange the prepared rolls on a serving plate and serve them warm. You can garnish the plate with salad leaves and chopped vegetables.
