Eggplant Rolls with Feta, Chili, and Mint

Ingredients

2 piece Eggplant, raw

3 spoons Oil, olive

250 g Cheese, feta

1 piece Chili peppers, red chili, fresh

1 handful Mint

1 spoon Juice, lemon

1 pinch Spices, pepper, black
Steps

First, clean and wash the unpeeled eggplants. Then, slice them lengthwise into approximately 0.5 cm thick slices. Brush both sides of the eggplant slices with olive oil (using a brush).

Preheat the grill well. Arrange the eggplant slices on the hot grill. When the slices turn slightly brown on the bottom side (after about 2 minutes), carefully flip them and cook the other side. Remove the grilled slices from the grill and place them on a plate.

In a bowl, crumble the feta cheese with your hands. Wash and clean the sweet chili pepper (remove the stem and seeds). Finely chop the chili pepper and mint leaves, then add them to the bowl with the feta. Add lemon juice and a bit of freshly ground pepper, then mix everything well with a spoon.

Lay the grilled eggplant slices on a clean work surface. Spoon the prepared filling onto the bottom third of each slice, then roll them up. Secure with toothpicks if needed. Arrange the rolls on a large plate or platter and serve.

Advice
Instead of feta cheese, you can use fresh goat cheese, and if desired, replace the mint with basil, marjoram, thyme, or oregano. The eggplant slices can also be grilled in a grill pan.
