Elderflower and Apple Crème Brûlée
Crème brûlée or baked custard is a famous French dessert first mentioned in a French cookbook from the 18th century. The basic preparation requires only egg yolks, sugar, and cream, but with elderflowers and caramelized apples, this renowned dessert becomes even more regal.

Ingredients
Apples with lemon zest

1 l Sweet cream

80 g Sugar, white

12 pieces Egg, egg yolk, fresh

Steps

Pour the cream into a saucepan and add sugar and dried elderflowers. Slowly heat the mixture until it boils, then remove from heat. Strain the cream through a sieve and press the elderflowers well to extract all the aroma.

Once the infused cream has cooled slightly, add the egg yolks and mix everything well with a hand mixer.

Pour the cream into heatproof ramekins and place them in a deep baking dish. Fill the dish with enough water to cover the bottom. Bake at 100 degrees Celsius for about 40 minutes or until the custard sets nicely.

Once the custard is baked, remove the ramekins from the oven and place them on a rack. Let the custard cool to room temperature. Then, chill the custard well in the refrigerator.

Meanwhile, prepare the caramelized apples with lemon zest. Cook small pieces of lemon zest in sweet water to slightly candy them. Wash, peel, and dice the apple into small cubes, then caramelize them with a spoonful of sugar in a hot pan. Add the lemon zest along with the sweet water, cook for a while, then remove from heat.

Take the ramekins with the chilled custard out of the refrigerator and sprinkle sugar on top. Caramelize the sugar using a torch. Place a small amount of caramelized apples on the caramel crust and serve the dessert immediately.
