Elderflower Syrup with Strawberries
The trendy drink of this summer, which you can prepare yourself with a bit of effort and patience. The syrup has a pleasant taste of strawberries and elderflower, and with the addition of citric acid and lemon, it is also refreshingly delightful. You can dilute it with plain or mineral water.

Ingredients

25 pieces Elderberry, flower, fresh

1.5 kg Sugar, white

50 g Juice, lemon

2 l Water

500 g Strawberries

2 piece Lemon, fresh, without shell

Inspect the elderflowers and remove any beetles or other insects.

In a large pot that can be covered, add the elderflowers, sugar, and citric acid. Pour boiling water over everything and let the mixture cool slightly.

Clean the strawberries and rinse them quickly under running water if necessary. Slice them. Wash the lemons and cut them into rounds. Add the sliced fruit to the pot with the cooled mixture. Mix everything well, and slightly crush the strawberries. Cover the pot and place it in a cool place for 72 hours. Stir the contents at least twice a day.

After three days, strain the liquid from the pot through a fine cloth. Squeeze the flowers, strawberries, and lemons well to extract as much of their flavor and aroma into the syrup as possible.

Pour the prepared syrup into hot bottles that have been sterilized in an oven preheated to 110 degrees Celsius. Seal the bottles and let them cool, then store them in a dark and cool place.

Advice
The ingredients are enough to prepare 3 liters of excellent syrup. Always pick elderflowers in dry and sunny weather during the morning. The flowers should be open but not brown, rather snow-white. Never wash the flowers, as the pollen must remain on the flower. Instead of strawberries, you can use raspberries.
