English Summer Pudding
While Slovenians know pudding as a sweet, starchy dish, the English use the term to describe a variety of dishes, from the famous Yorkshire pudding to the rich Christmas pudding. This time, we present a recipe for their popular summer pudding, made with bread and fresh fruit.

Ingredients

8 slice Bread, wheat

350 g Strawberries

350 g Raspberries

250 g Blueberry, raw

100 g Blackberry, fresh

100 g Red currant, fresh

170 g Sugar, white

Quickly rinse the fruit under running water and drain well on paper towels. In a suitable saucepan, add sugar and three tablespoons of water. Heat slowly over low heat until all the sugar dissolves. Bring to a boil and let it simmer for one minute, then add all the fruit except the strawberries to the saucepan. Cook for 2 to 3 minutes, gently stirring the fruit two or three times. Place a fine-mesh sieve over a bowl and pour the cooked fruit into it.

Line the inside of a round bowl (with a capacity of 1.25 liters) with plastic wrap. Leave about 15 cm of plastic wrap hanging over the edges of the bowl. Remove the crust from the bread slices. To make it easier to arrange them in the bowl, cut the slices into pieces of any size. Take one piece of bread, dip both sides into the strained fruit juice, and place it at the bottom of the bowl. Repeat the process until the entire inside of the bowl is lined with bread. Arrange the slices so that they slightly overlap.

Cut the strawberries into smaller pieces and mix them with the cooked fruit. Then pour the fruit into the bowl and cover it with the soaked bread pieces. Fold the plastic wrap over the bread and place a plate on top of the bowl, weighted down with cans. Store the bowl in the refrigerator for at least 6 hours (preferably overnight).

When ready to serve, remove the bowl from the refrigerator and take off the cans, plate, and plastic wrap. Place an inverted plate on top of the bowl and carefully flip the pudding onto it. Decorate with fresh fruit if desired and serve with a scoop of ice cream or whipped cream.
