English Tea Scones (Scones)
Scones are simple, very popular biscuits in England, typically served for breakfast. They are best when still warm, spread with butter and good homemade jam. If you add a bit of mascarpone or lemon curd, the enjoyment is even greater.

350 g Wheat flour, white, multi-purpose

85 g Butter, unsalted

175 ml Milk, whole milk

Preheat the oven to 220 degrees Celsius. In a large, cooled bowl, sift the flour and mix it with baking powder and salt. Add the butter, cut into pieces, and quickly rub it into the dry mixture with your fingertips, lifting the mixture to make it airy and crumbly. Add the sugar and mix it with the buttery crumbs.

In a small bowl, beat the egg and mix it with the milk. Pour the mixture into the bowl. Quickly mix everything together with your hands until the ingredients are well combined and you have a soft, but not sticky dough. If the dough is too soft and sticky, add a bit more flour.

Turn the dough onto a floured surface and quickly knead it. Then roll it out to about 2 cm thick. Using a cutter, cut out any shapes you like (triangles, squares, circles, flowers, or hearts) and carefully place them on a baking tray lined with baking paper. Before baking, brush the dough with a mixture of milk and beaten egg. Bake the scones in the preheated oven for about 10 minutes.

When the scones have risen and are nicely golden brown on top, remove the tray from the oven. Wait a few minutes for the scones to cool, then serve them.
