Eton Mess with Raspberries
Eton Mess is a very simple yet highly popular English dessert that got its name from the medieval town of Eton, home to the famous college. The dessert is traditionally made with strawberries, but it is also excellent with other berries. This time, we present a recipe for a version with raspberries.

Ingredients

1 cup Raspberries

2 spoons Juice, orange

2 spoons Sugar, white

115 g Cheese, creamy

180 ml Sweet cream

4 pieces Egg, egg white, powdered

Place a small pot on the stove and add half of the raspberries, orange juice, and a tablespoon of sugar. Heat over medium heat, stirring occasionally, until a slightly thicker fruit sauce forms (about 5 minutes). Remove the pot from the heat and let the sauce cool slightly.

Lightly whip the cream and the remaining sugar with an electric mixer. Add the mascarpone and mix well until a uniform cream forms. Crumble the meringue into smaller pieces by hand and gently fold them into the cream.

Reserve a few raspberries for decoration and mix the rest into the cooled raspberry sauce. Prepare the glasses in which you will serve the dessert. First, add 1 to 2 tablespoons of the cream with meringue pieces. Spread the raspberries in the sauce over the cream. Then fill the glasses almost to the top with the cream. Decorate the prepared dessert with fresh raspberries and serve.

Advice
Meringue (meringue kisses) can be bought or made at home. If the raspberry sauce seems too sour, add a little more sugar.
