Falafel
Falafel are fried balls or patties made from blended chickpeas and spices. They are eaten with pita bread. They are best served with salad, pickled vegetables, and spicy sauces.

250 g Chickpea, raw

1 teaspoon Salt, table

1.5 teaspoons Baking powder

1 teaspoon Spices, cumin seeds

1 teaspoon Spices, coriander - seeds

4 pods Garlic, fresh

2 spoons Parsley, fresh

0.5 piece Juice, lemon

Steps

Peel the garlic cloves. Wash the lemon, cut it in half, and squeeze the juice from one half. Drain the soaked chickpeas, rinse them under running water, and drain thoroughly. Blend the chickpeas in a food processor along with salt, cumin, coriander, pepper, garlic, parsley, and lemon juice. Blend until you get a finely chopped mixture, but it should not be completely smooth. Transfer the mixture to a bowl, cover it, and let it sit for 30 to 60 minutes.

Mix baking powder into the mixture. With wet hands, shape the mixture into 16 patties.

Heat oil well in a deep pan. Fry the falafel in batches for 4 minutes, as they should not be crowded in the pan during frying. Turn them occasionally so they brown nicely. Remove the fried falafel with a slotted spoon and place them on a paper towel to absorb excess oil.

Advice
Serve falafel in pita bread, along with chopped lettuce (cabbage), hummus, and a spicy cream sauce. Optionally, you can mix in a tablespoon of breadcrumbs and a finely chopped small onion and cilantro. If the mixture falls apart during frying, mix in a few tablespoons of flour. Fry in a large amount of fat. The food should float in it. Use fats that do not contain water for frying, such as coconut fat or good oil. The frying fat is hot enough when small bubbles form around a wooden spoon.
