Fermented Apple Roses
A beautiful dessert for short autumn and winter days when we spend more time warming up. These roses will warm you up both with their appearance and taste. The preparation might seem complicated, but youll quickly find it to be quite fun.

Ingredients
Dough

100 ml Milk, whole milk

1 spoon Sugar, white

7 g Yeast, dry

400 g Wheat flour, white, multi-purpose

1 bag Sugar, white

1 pinch Salt, table

Filling

500 g Apples, rose

2 spoons Sugar, white

1 spoon Water

1 piece Lemon, fresh, without shell

1 spoon Spices, cinnamon, ground

Steps

Heat the milk to lukewarm (40 degrees Celsius) and pour it into a bowl. Add a tablespoon of sugar and dry yeast, then mix. Let it sit for 10 minutes.

In another bowl, sift the flour and add vanilla sugar, salt, eggs, egg yolk, and butter, which we have previously cut into pieces. Pour in the milk with yeast, then mix everything together.

Pour the dough onto the counter and knead it for a good 10 minutes until it becomes soft, pliable, and elastic. Shape it into a loaf, place it in a bowl, and cover it. Let the loaf rise for at least an hour or until its volume doubles.

Meanwhile, peel the apples and cut them into smaller pieces. Place them in a pot and add sugar, a tablespoon of water, grated lemon zest, and lemon juice. Cook for 20 minutes until the apples soften, then mix in cinnamon and remove from heat.

Grease a cake baking pan and line the bottom with parchment paper. You can use a larger pan, 24 cm in size, or a smaller one to get taller roses.

Place the risen dough on the counter and divide it into 6 equal parts. Roll each part lengthwise so that you can cut 4 circles, 8 cm in diameter, from the dough. From the leftovers, cut 8 more circles, so you have a total of 32.

For one rose, you need 4 circles. Place a little apple filling on each, then fold them so they overlap by about half.

Roll them up, starting with the circle that is fully visible. If some filling is peeking out, stretch the dough and cover it. Seal the edges of each circle and also flatten the bottom of each rose, then place it in the baking pan.

Cover the pan with foil and let the roses rise for at least an hour before baking.

Preheat the oven to 180 degrees Celsius and bake the roses for about 35 minutes. Let them cool before removing them from the pan. Optionally, dust the pastries with powdered sugar before serving.
