Fermented Doughnuts with Raisins and Walnuts

Ingredients

750 g Flour, Wheat, bread flour

40 g Yeast, dry

1 spoon Sugar, white

400 ml Milk, whole milk

1 piece Egg, egg yolk, fresh

1 pinch Salt, table

pieces Lemon zest, fresh

100 g Raisins

50 ml Alcohol, Rum

50 g Walnuts

pieces Oil, vegetable oil, canola

Steps

Pick through the raisins, rinse them under running water, and drain. Place them in a bowl, pour rum over them, and let them soak for at least 15 minutes.

In another bowl, crumble the yeast and add sugar, a tablespoon of flour, and a few tablespoons of lukewarm milk. Mix and let the yeast rise in a warm place for 15 minutes. Mix the remaining milk with egg yolks, salt, and grated lemon zest.

Sift the flour into a bowl and make a well in the center. Pour the risen yeast mixture into the well, then add the egg yolk mixture. Knead the ingredients into a smooth, pliable, and quite soft dough. Cover it with a cloth and let it rise in a warm place for about 30 minutes.

Quickly knead the drained raisins and chopped walnuts into the dough, then cover it again and let it rise for 30 minutes.

Heat oil in a large pot to 180 ÂșC. If you don't have a thermometer, you can test the oil by dipping the handle of a wooden spoon into it. The oil is hot enough when bubbles form around the handle.

Take a large soup spoon and dip it into the hot oil for a few seconds. Then use the spoon to scoop the risen dough and place it into the oil. The dough should easily slide off the oiled spoon. Fry the doughnuts gradually. When they are golden brown on one side, flip them and fry the other side. Repeat the process until all the dough is used.

Remove the fried doughnuts from the oil with a slotted spoon and place them on a plate lined with kitchen towels. Let the excess oil drain off.

Serve the still-warm doughnuts on a large plate or platter, dust with powdered sugar, and serve.

Advice
The doughnuts are fried in a large amount of fat. Instead of raisins, you can use cranberries.
