Fermented Easter Bunnies
Adorable Easter bread rolls that your little ones will be happy to help you prepare. Everyone will enjoy munching on them even more. You can sprinkle the tails with any seeds or coconut flour, or you can skip this step entirely.

Ingredients
Yeast dough

80 g Butter, unsalted

1.5 dl Milk, whole milk

50 g Sugar, white

5 g Salt, table

25 g Yeast, dry

2 piece Egg, fresh

2 spoons Alcohol, Rum

Pour the milk into a cup, add butter, sugar, and salt. Heat until lukewarm, or up to 42 degrees Celsius, so the butter melts. If the milk gets too hot, let it cool slightly.

Sift the flour into a larger bowl and make a well in the center. Pour the milk mixture into the well and crumble the yeast on top. Mix slightly and let it sit for 10 minutes.

Once the yeast has risen, add a lightly beaten egg and yolk. Mix with a spoon until the ingredients combine, then transfer to the counter and knead into a smooth and soft dough.

Shape the dough into a loaf. Place it in a bowl, cover, and let it rise for 1 hour.

Turn the risen dough onto the counter, knead it slightly, and divide it into 10 equal parts.

Pinch off a small piece from each portion and shape it into a ball. Roll the larger pieces into long ropes, then shape them into bunnies, as shown in the photo.

Place the balls (tails) into the holes.

Line a larger baking tray with parchment paper and arrange the bunnies on it. Cover with a kitchen towel and let them rise for 30 minutes. Meanwhile, preheat the oven to 200 degrees Celsius.

Before baking, beat the egg together with two tablespoons of water. Brush the bunnies with the egg wash and sprinkle the tails with seeds or coconut flour if desired.

Bake the fermented bunnies in the preheated oven for 15 minutes until they are nicely browned, then let them cool slightly on a wire rack.
