Fermented Rolls with Forest Fruits
Juicy, light, and soft pastry that melts in your mouth, like other fermented dough pastries, is best when still warm. When preparing the rolls, take your time, as youll need to put in a bit of effort for a beautiful final appearance. This dessert is also suitable for special occasions such as Valentines Day and Mothers Day, and it fits perfectly on a cold winter or autumn day. With a cup of warm drink, of course.

Ingredients
Dough

500 g Wheat flour, white, multi-purpose

1 teaspoon Salt, table

30 g Yeast, dry

50 g Sugar, white

250 ml Milk, whole milk

40 g Butter, unsalted

2 piece Egg, fresh

pieces Lemon zest, fresh

500 g Blueberry, raw

100 g Butter, unsalted

120 g Sugar, brown
Steps

Sift the flour into a bowl and make a well in the center. Crumble the yeast into it and mix it with a little sugar, lukewarm milk, and a bit of flour. Let it stand in a warm place for about 15 minutes to allow the mixture to rise.

Add the butter to a cup and slowly melt it over low heat. Remove from heat, let it cool to lukewarm, then mix in the eggs, the remaining sugar, and lemon zest.

Sprinkle salt around the well in the flour, then pour the egg-butter mixture into the well with the risen yeast. Knead the ingredients into a smooth, soft, and pliable dough, cover it with a cloth, and let it rise in a warm place for about 30 minutes.

Melt the butter that will be used to grease the baking dish and brush the dough over low heat. Divide the risen dough into 50 g pieces. Roll each piece on a lightly floured surface into a strip about 8 x 20 cm, brush it with melted butter, and sprinkle with brown sugar. Place frozen forest fruits along the center of the strip, then fold the strip lengthwise and roll it into a spiral.

Thoroughly grease the baking dish (26 cm in diameter) with the remaining butter, then place the spirals side by side in the dish, making sure the folded side is facing down. Let the rolls rise in a warm place for 15 minutes before baking.

Preheat the oven to 190 degrees Celsius. Brush the risen rolls with melted butter and sprinkle with the remaining brown sugar before baking. Bake in the preheated oven for 25 to 30 minutes and serve while still warm.
