Fermented Snails with Blueberries and White Chocolate

Ingredients

Steps

First, prepare the yeast mixture: in a small bowl, smoothly mix milk, yeast, a teaspoon of sugar, and a tablespoon of flour. Let it stand for 10 minutes to allow the yeast to rise.

In a smaller bowl, mix lemon zest, melted butter, egg yolks, and the remaining sugar. In a larger bowl, sift the flour and mix it with salt. Make a well in the center and pour in the egg mixture and the risen yeast mixture. Attach the dough hooks to the electric mixer and start mixing. Knead the dough on medium speed for 8 minutes until it becomes smooth, pliable, and elastic.

Place the kneaded dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 hour or until its volume doubles.

Quickly knead the risen dough, then roll it out on a floured work surface into a large rectangle, about 20 x 45 cm. Brush the dough well with melted butter and sprinkle with sugar. Then sprinkle blueberries and chocolate chunks over the dough. Roll it into a long log and cut it into 12 pieces, which you place tightly together in a greased deep baking dish. Cover the dish with a clean cloth and let the snails rise for 25 minutes.

Preheat the oven to 180 degrees Celsius. Before baking, brush the risen snails with melted butter. Bake them in the preheated oven on the middle rack for 40 minutes.

Once the dough turns a beautiful golden brown, remove the baking dish from the oven. Wait for the snails to cool slightly, then sprinkle them with powdered sugar and serve.
