Fermented Walnut Crescents (Kifeljčki)

250 g Walnuts

500 ml Milk, whole milk

1 kg Wheat flour, white, multi-purpose

2 dl Oil, vegetable oil, canola

First, prepare the yeast mixture: crumble the yeast into 1 dl of lukewarm milk. Add a teaspoon of sugar and a teaspoon of flour, mix well, and let it sit for 10 minutes to allow the yeast to rise slightly.

Beat the eggs and sugar well until you get a frothy mixture, then gradually mix in the sugar, salt, oil, the remaining milk, the yeast mixture, and the sifted flour. Knead into a smooth and soft dough, shape it into a ball, and let it rise in a warm place for about 40 minutes or until it doubles in size.

Prepare the filling. Grind the walnuts or chop them finely with a sharp knife. Beat the egg whites with a pinch of salt until stiff peaks form. First, add sugar to the ground walnuts, then gently fold in the beaten egg whites.

Divide the risen dough into four parts and roll each one out into a circle about 1-2 mm thick. Cut the circles into eighths to get small isosceles triangles. Take one triangle and place a spoonful of filling in the middle of the wider end, then roll it up neatly into a crescent. The tip of the triangle should be on the bottom to prevent the filling from leaking out during baking. Repeat the process until all the crescents are rolled.

Place the prepared crescents on a baking tray lined with parchment paper. Brush the tops with beaten egg and bake for about 25 minutes in an oven preheated to 180 degrees Celsius. They are done when they turn a nice golden brown color.

Dust the baked crescents with powdered sugar. Serve them warm or let them cool completely before serving.
