Fiadone
Fiadone is a famous Corsican cake made from brocciu cheese - a Corsican albumin, more precisely, a dairy curd from sheep or goat milk or whey. The cake does not contain flour and is therefore an excellent choice for those who are allergic to gluten.

Ingredients

4 pieces Egg, fresh

125 g Sugar, white

500 g Cheese, cottage cheese, from skimmed milk

pieces Lemon zest, fresh

1 pinch Salt, table

Steps

Crack the eggs and separate the whites and yolks into two bowls. Whisk the yolks with sugar until frothy. Add the pressed curd and grated lemon zest, and mix on low speed until a smooth mixture is obtained.

Preheat the oven to 180 degrees Celsius. Lightly grease a round baking dish with butter.

Beat the egg whites with salt until stiff peaks form, then gently and slowly fold them into the curd mixture in two or three additions. Pour the batter into the prepared baking dish, spread it evenly, and smooth the top. Bake the cake in the preheated oven for 40 minutes.

When the top of the cake is nicely golden brown, remove the baking dish from the oven and let the cake cool slightly. While still warm, dust with powdered sugar, cut into desired-sized pieces, and serve.

Advice
Instead of sheeps curd, you can use goats dairy (albumin) curd or ricotta. Dairy curd is one of many names for curd made from sweet milk, also known as albumin, alpine, or sweet curd. Drain and press the curd well at the beginning of preparation.
