Fig Cake (Fresh Fig Tart)
The author of the recipe, Kaja Pogačar, competed for the win in the second season of the show Gostilna išče šefa. The determined 26-year-old says that the kitchen represents a sanctuary and refuge for her, and that cooking enriches and inspires her. She became passionate about cooking at a young age, helping her mother, grandmother, and great-grandmother prepare meals. Kaja is a big fan of desserts, so its no surprise that she shared a recipe for an outrageously delicious fresh tart.

2 dl Sweet cream

400 g Yogurt, plain, from whole milk

1 spoon Honey

1 teaspoon Syrup, maple

In a food processor, blend almonds and dates until you get a moldable mixture. If the mixture is too dry, add a little water; if it's not sweet enough, add a bit of agave syrup. Transfer the mixture to a tart pan (20 cm in diameter) and shape it into a crust with edges. Place the tart pan in the refrigerator for at least 30 minutes.

Whip the sweet cream with an electric mixer until stiff. Mix the whipped cream with Greek yogurt, vanilla, molasses, and honey.

Take the tart pan out of the refrigerator and transfer the crust to a serving plate. Fill it with the cream mixture and place figs on top. Decorate the prepared tart with pistachios, mint leaves, and molasses.
